14 oz firm tofu, pressed and cubed

1 cup fresh pineapple chunks (or canned, drained)

1/4 cup soy sauce

2 tbsp honey or maple syrup

2 tbsp rice vinegar

1 clove garlic, minced

1 tsp fresh ginger, grated

1 tbsp cornstarch

2 tbsp vegetable oil (for frying)

1 green onion, chopped (for garnish)

Sesame seeds (for garnish)

Cooked jasmine rice (for serving)

Instructions
 

Prepare the Tofu: Begin by pressing the tofu to remove excess moisture. Wrap the tofu block in a clean kitchen towel, place a heavy object on top, and let it sit for about 20-30 minutes. Once pressed, cut the tofu into 1-inch cubes.

    Make the Pineapple Glaze: In a blender or food processor, combine the fresh pineapple chunks, soy sauce, honey (or maple syrup), rice vinegar, minced garlic, and grated ginger. Blend until smooth.

      Thicken the Glaze: In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Add this to the blended pineapple mixture and stir well. Pour the mixture into a saucepan and cook over medium heat for 3-5 minutes, or until slightly thickened. Remove from heat and set aside.

        Cook the Tofu: Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the cubed tofu in a single layer. Cook for about 5-7 minutes on each side or until golden and crispy. Be careful not to overcrowd the pan; cook in batches if necessary.

          Combine Tofu and Glaze: Once the tofu is cooked, pour the thickened pineapple glaze over the tofu in the skillet. Gently stir to coat the tofu evenly, allowing it to simmer for 2-3 minutes to absorb the flavors.

            Serve: Remove from heat and transfer the glazed tofu to a serving platter. Garnish with chopped green onions and sesame seeds. Serve alongside warm jasmine rice.
