Ingredients

2 cups cooked chicken, shredded or diced

1/2 cup basil pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

4 slices of crusty bread (like sourdough or ciabatta)

2 tablespoons olive oil

Fresh basil leaves for garnish

Salt and pepper to taste

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the Chicken Mixture: In a large bowl, combine the shredded chicken, basil pesto, halved cherry tomatoes, mozzarella cheese, and Parmesan cheese. Season with salt and pepper to taste. Mix well until all ingredients are evenly coated.

Toast the Bread: Brush both sides of each slice of crusty bread with olive oil. Place the slices on the prepared baking sheet and toast in the preheated oven for about 5-7 minutes, or until they are lightly golden and crispy.

Assemble the Melts: Remove the toasted bread from the oven and evenly distribute the chicken and tomato mixture onto each slice. Press down gently to ensure the toppings stick.

Melt the Cheese: Return the loaded toast to the oven and bake for an additional 8-10 minutes, or until the cheese is melted, bubbly, and starting to turn golden.

Garnish and Serve: Remove the toast melts from the oven and let them cool slightly. Garnish with fresh basil leaves and a drizzle of extra olive oil if desired. Serve warm and enjoy!
