1 pound ground turkey

1/2 cup fresh basil pesto

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1 large egg, beaten

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup cherry tomatoes, halved (for roasting)

Olive oil (for drizzling)

Fresh basil leaves (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Prepare the meatball mixture: In a large mixing bowl, combine the ground turkey, basil pesto, breadcrumbs, grated Parmesan cheese, beaten egg, minced garlic, dried oregano, salt, and black pepper. Mix until fully incorporated, but be careful not to overmix.

      Form the meatballs: With your hands, scoop out about 2 tablespoons of the mixture and roll it into a ball. Place the meatballs on the prepared baking sheet, spacing them about an inch apart. Repeat the process until all the mixture is used.

        Add cherry tomatoes: Tuck the halved cherry tomatoes around the meatballs on the baking sheet. Drizzle everything with a little olive oil to help them roast beautifully.

          Bake: Place the baking sheet in the oven and bake for 20-25 minutes, or until the meatballs are golden brown and cooked through (internal temperature should reach 165°F/74°C).

            Serve: Remove from the oven and let them cool slightly. Garnish with fresh basil leaves before serving. These can be served alone, over pasta, or in a sub sandwich!
