Ingredients

1 lb sirloin steak, cut into 1-inch cubes

2 tablespoons olive oil

Salt and pepper, to taste

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Prepare the Steak: Begin by patting the sirloin steak cubes dry with paper towels. This will help achieve a nice sear. Season the cubes generously with salt and pepper.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until it’s shimmering. This should take about 2 minutes.

Cook the Steak Bites: Add the steak cubes to the hot skillet in a single layer, being careful not to overcrowd the pan. Sear for about 2-3 minutes on each side for medium-rare, adjusting the time as necessary for your preferred doneness. Use a meat thermometer for accuracy (130°F for medium-rare).

Make the Garlic Butter Sauce: Once the steak bites are cooked to your liking, reduce the heat to medium-low. Push the steak to one side of the skillet. In the cleared spot, add the butter, minced garlic, and thyme. Stir continuously for about 1-2 minutes until the garlic is fragrant but not browned.

Combine: Gently toss the steak bites in the garlic butter sauce, ensuring they are well-coated. Allow everything to sauté together for another minute.

Serve: Remove the skillet from heat. Garnish with chopped fresh parsley and serve immediately, spooning extra garlic butter sauce over the top.
