Ingredients

1 lb flank steak, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 medium onion, sliced

1 bell pepper (any color), sliced

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon oyster sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt and pepper to taste

Cooked rice or noodles, for serving

Green onions, sliced (for garnish)

Instructions

Marinate the Steak: In a medium bowl, mix the sliced flank steak with soy sauce and cornstarch. Let it marinate for at least 15 minutes while you prepare the other ingredients.

Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat until shimmering.

Cook the Steak: Add the marinated steak to the hot skillet in a single layer (you may need to do this in batches). Sear each side for about 2-3 minutes until nicely browned. Remove the steak from the skillet and set it aside.

Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onions and bell pepper, and stir-fry for about 3-5 minutes, or until the vegetables are tender but still crisp.

Add Aromatics: Stir in the minced garlic and grated ginger, and cook for an additional 30 seconds until fragrant.

Combine Ingredients: Return the cooked steak to the skillet. Add the oyster sauce, hoisin sauce, rice vinegar, and sesame oil. Stir everything together to ensure the steak and vegetables are well-coated with the sauce.

Simmer: Allow the mixture to simmer for an additional 2-3 minutes until heated through. Season with salt and pepper to taste.

Serve: Spoon the pepper steak over cooked rice or noodles. Garnish with sliced green onions for a fresh touch.
