Ingredients

4 medium ripe pears, peeled, cored, and sliced

2 cups fresh raspberries (you can also use frozen)

1 cup granulated sugar, divided

2 tablespoons all-purpose flour

1 teaspoon vanilla extract

1 teaspoon lemon juice

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 cup all-purpose flour (for cobbler topping)

1 tablespoon baking powder

1/4 cup unsalted butter, melted

1/2 cup whole milk

1 large egg

1 tablespoon brown sugar (for topping)

Ice cream or whipped cream (for serving, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Fruit Filling: In a large mixing bowl, combine sliced pears, raspberries, 1/2 cup granulated sugar, 2 tablespoons flour, vanilla extract, lemon juice, ground cinnamon, and salt. Gently toss to coat the fruit evenly. Let it sit for about 10 minutes to allow the juices to meld.

Make the Cobbler Topping: In another bowl, whisk together 1 cup flour, baking powder, and the remaining 1/2 cup granulated sugar. In a separate bowl, mix the melted butter, whole milk, and egg until well combined. Pour the wet ingredients into the dry ingredients and stir just until combined (be careful not to overmix).

Combine and Bake: Pour the fruit mixture into a greased 9x13 inch baking dish, spreading it evenly. Drop spoonfuls of the cobbler topping over the fruit filling, spreading it out as best as you can, but it’s okay if some fruit is still visible. Sprinkle the top with brown sugar for added sweetness and a nice crust.

Bake: Place the dish in the preheated oven and bake for 40-45 minutes or until the topping is golden brown and the fruit is bubbling around the edges.

Serve: Let the cobbler cool for about 10-15 minutes before serving. Serve warm, optionally topped with a scoop of vanilla ice cream or a dollop of whipped cream for added indulgence.
