Peanut Butter Oat Cups

1 ½ cups rolled oats

½ cup peanut butter (creamy or crunchy)

¼ cup honey or pure maple syrup

¼ cup unsweetened cocoa powder

½ teaspoon vanilla extract

¼ teaspoon salt

¼ cup mini chocolate chips (optional)

¼ cup chopped nuts (like almonds or walnuts, optional)

2 tablespoons chia seeds (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray it with cooking spray for easy removal.

    Mix Wet Ingredients: In a large mixing bowl, combine the peanut butter, honey (or maple syrup), vanilla extract, and salt. Stir until well combined and smooth.

      Combine Dry Ingredients: In another bowl, mix the rolled oats, cocoa powder, and chia seeds (if using). Stir to distribute the cocoa powder evenly.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture. Stir until everything is well incorporated. If you'd like, fold in mini chocolate chips and chopped nuts for extra texture and flavor.

          Spoon into Muffin Tin: Evenly distribute the mixture into the prepared muffin tin, filling each cup about ¾ full. Press down with the back of a spoon to pack the mixture tight.

            Bake: Place the muffin tin in the preheated oven and bake for about 15-18 minutes, or until the edges are golden brown and firm to the touch.
