Peanut Butter Cookie Ice Cream Sandwiches

1 cup creamy peanut butter

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 pint vanilla ice cream (or your favorite flavor)

1/2 cup chocolate chips (optional)

1/2 cup crushed peanuts (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Make the Cookie Dough: In a large mixing bowl, combine the peanut butter, granulated sugar, and brown sugar. Mix until it's smooth and well blended.

      Add Eggs and Vanilla: Add the eggs and vanilla extract to the mixture, mixing well until fully incorporated.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined. If you’re using chocolate chips, fold them into the dough at this stage.

          Scoop and Bake: Using a tablespoon or cookie scoop, drop rounds of dough onto the prepared baking sheets, leaving space between each for spreading. Press down slightly to flatten them. Bake in preheated oven for 10-12 minutes, or until the edges are lightly golden.

            Cool the Cookies: Once baked, remove from oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

              Assemble the Sandwiches: Once the cookies are completely cool, scoop a generous amount of vanilla ice cream onto the flat side of one cookie and top with another cookie, pressing gently to form a sandwich.

                Garnish (Optional): If desired, roll the edges of the ice cream in crushed peanuts for added texture and flavor.

                  Freeze: Place the assembled sandwiches back in the freezer for about 30 minutes to allow the ice cream to firm up.
