½ cup rolled oats

¾ cup brown sugar, packed

½ cup unsalted butter, melted

1 teaspoon vanilla extract

4 medium ripe peaches, peeled and diced (about 4 cups)

2 tablespoons granulated sugar (adjust based on peach sweetness)

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

For the Cream Cheese Layer:

8 oz cream cheese, softened

¼ cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon heavy cream (optional for a richer texture)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper for easy removal.

    Make the Crust and Crumble:

      - In a large mixing bowl, combine the flour, rolled oats, brown sugar, salt, and baking powder. Mix well.

        - Add the melted butter and vanilla extract. Stir until the mixture resembles coarse crumbs.

          - Reserve 1 cup of this mixture for the crumble topping, and press the remaining mixture evenly into the bottom of the prepared baking pan to form the crust.

            Prepare the Peach Filling:

              - In another bowl, toss the diced peaches with granulated sugar, lemon juice, cornstarch, and vanilla extract. Stir until the peaches are evenly coated.

                Make the Cream Cheese Layer:
