4 slices of rustic baguette or sourdough bread

1 cup fresh ricotta cheese

2 ripe peaches, pitted and thinly sliced

2 tablespoons honey

1 tablespoon olive oil

1 teaspoon fresh lemon juice

Fresh basil leaves, for garnish

Sea salt and freshly cracked black pepper, to taste

Optional: Balsamic glaze for drizzling

Prepare the Bread: Preheat your oven to 400°F (200°C). Arrange the slices of bread on a baking sheet. Brush both sides with olive oil and sprinkle with a pinch of salt. Toast in the oven for 8-10 minutes, flipping halfway, until golden and crispy.

    Mix the Ricotta: In a small bowl, combine the ricotta cheese, honey, fresh lemon juice, and a pinch of salt and pepper. Stir until well blended and creamy. Adjust the sweetness to taste by adding more honey if desired.

      Assemble the Toasts: Once the bread is toasted, spread a generous layer of the ricotta mixture on each slice. Top with thin slices of peach, arranging them artistically for a beautiful presentation.
