Ingredients

For the Filling:

4 large ripe peaches, peeled and sliced

1 cup fresh raspberries

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

1 teaspoon ground cinnamon

For the Crumble Topping:

1 cup rolled oats

1/2 cup all-purpose flour

1/3 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup cold unsalted butter, cut into small cubes

1/2 cup chopped nuts (e.g., almonds or walnuts) – optional

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch baking dish or pie pan lightly with butter or non-stick spray.

Prepare the Filling: In a large bowl, combine the sliced peaches, fresh raspberries, granulated sugar, lemon juice, vanilla extract, cornstarch, and ground cinnamon. Toss gently to coat the fruit evenly and set aside for about 10 minutes.

Make the Crumble Topping: In a separate bowl, mix the rolled oats, flour, brown sugar, baking powder, and salt. Add the cold butter cubes to the dry ingredients. Using your fingers, a fork, or a pastry cutter, work the butter into the dry ingredients until the mixture resembles coarse crumbs. If desired, stir in the chopped nuts for added texture.

Assemble the Crumble: Pour the fruit mixture into the prepared baking dish, spreading it out evenly. Top the fruit with the crumble mixture, ensuring even coverage.

Bake: Place the baking dish in the preheated oven and bake for 30 to 35 minutes, or until the crumble is golden brown and the fruit is bubbling around the edges.

Cool and Serve: Once baked, remove from the oven and allow it to cool slightly for about 10 minutes. Serve warm or at room temperature, possibly with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
