4 slices of rustic whole grain bread

1 cup fresh ricotta cheese

2 ripe peaches, sliced

2 tablespoons honey (preferably local)

1 tablespoon fresh lemon juice

1 tablespoon olive oil

¼ teaspoon sea salt

½ teaspoon freshly ground black pepper

Fresh basil leaves for garnish

Optional: crushed pistachios or walnuts for added crunch
