1 and ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1 tablespoon granulated sugar

16 oz (2 packages) cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

2 cups fresh peaches, peeled and diced (about 3 medium peaches)

1 teaspoon lemon juice

½ cup sour cream

½ teaspoon ground cinnamon

Pinch of salt

Instructions
 

Prepare the Crust: Preheat your oven to 325°F (163°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and 1 tablespoon of sugar. Mix until well combined. Press this mixture firmly into the bottom of a greased 9x13-inch baking dish. Bake for 10 minutes and then set aside to cool.

    Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer. Gradually add in the 1 cup of granulated sugar and continue to mix until creamy. Add in the vanilla extract and mix again.

      Add the Eggs: Incorporate the eggs one at a time, beating well after each addition until fully combined.

        Prepare Peaches: In a separate bowl, toss the diced peaches with lemon juice, ground cinnamon, and a pinch of salt. Gently fold the peach mixture into the cheesecake batter, being careful not to overmix.

          Combine with Sour Cream: Lastly, stir in the sour cream until just combined. Pour the cheesecake batter over the cooled crust in the baking dish.

            Bake the Cheesecake Bars: Bake in the preheated oven for 40-45 minutes, or until the edges are firm and the center has a slight jiggle. Turn off the oven and allow the bars to cool in the oven with the door slightly ajar for about 1 hour.

              Chill the Bars: Once cooled, transfer to the refrigerator and chill for at least 4 hours, or overnight for best results.
