4 boneless, skinless chicken breasts

2 ripe peaches, sliced (preferably freestone)

1 medium onion, thinly sliced

2 cloves garlic, minced

1 cup chicken broth

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

Prepare the Ingredients: Begin by slicing the peaches, onion, and mincing the garlic. Set aside.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt, pepper, dried thyme, and dried rosemary. Add the chicken to the skillet and sear for about 6-7 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
