Peach Breakfast Muffins

1 ½ cups all-purpose flour

½ cup granulated sugar

½ cup brown sugar, packed

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup unsalted butter, melted and slightly cooled

2 large eggs

1 teaspoon pure vanilla extract

½ cup buttermilk (or ½ cup milk + 1 tsp lemon juice)

2 cups fresh peaches, diced (about 2 medium peaches)

½ cup chopped walnuts or pecans (optional)

1 tablespoon turbinado sugar (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and ground cinnamon. Whisk together until well combined.

      Prepare Wet Ingredients: In another bowl, whisk together the melted butter, eggs, vanilla extract, and buttermilk until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently stir until just combined; be careful not to overmix. The batter should be lumpy but incorporated.

          Fold in Peaches and Nuts: Gently fold in the diced peaches and nuts (if using) until evenly distributed through the batter.

            Fill Muffin Tin: Scoop the batter evenly into the prepared muffin tin, filling each cup about ¾ full. Sprinkle a little turbinado sugar on top of each muffin for added crunch.

              Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

                Cool: Remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then transfer them to a wire rack to cool completely.
