Ingredients

2 large ripe peaches, diced

1 ripe avocado, diced

1/2 small red onion, finely chopped

1 small jalapeño, seeds removed and minced (adjust for spice preference)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 tablespoon honey (optional, adjust based on peach sweetness)

Salt and freshly ground black pepper, to taste

Instructions

Prepare the Fruits: Start by washing and dicing the peaches into small cubes. Make sure they are ripe for maximum sweetness. Cut the avocado in half, remove the pit, scoop out the flesh, and dice it into similar-sized pieces as the peaches.

Chop the Aromatics: Finely chop the red onion and jalapeño, ensuring that the pieces are small enough to blend well with the salsa.

Mix the Ingredients: In a medium-sized mixing bowl, combine the diced peaches, avocado, red onion, jalapeño, and chopped cilantro.

Dress the Salsa: Squeeze fresh lime juice over the mixture to add acidity and prevent the avocado from browning. If desired, drizzle honey over the mixture to enhance sweetness.

Season: Add salt and freshly ground black pepper to taste. Stir gently to combine all ingredients without mashing the avocado.

Chill: For the best flavor, let the salsa sit for at least 15-20 minutes in the refrigerator before serving. This will allow the flavors to meld together beautifully.

Serve: Serve the Peach Avocado Salsa chilled with tortilla chips, or as a topping for grilled fish, chicken, or tacos!
