Parmesan Zucchini Noodle Bake

4 medium zucchinis, spiralized into noodles

1 cup ricotta cheese

1 cup grated Parmesan cheese, divided

1 cup shredded mozzarella cheese, divided

2 cups marinara sauce

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Olive oil, for drizzling

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Zucchini Noodles: Place the spiralized zucchini noodles in a colander, sprinkle with salt, and let them sit for about 15-20 minutes. This will help draw out excess moisture. After resting, pat them dry with paper towels.

      Mix Cheese Filling: In a large mixing bowl, combine the ricotta cheese, half of the grated Parmesan cheese (½ cup), half of the shredded mozzarella cheese (½ cup), minced garlic, oregano, basil, red pepper flakes (if using), salt, and pepper. Mix well until creamy and combined.

        Layer Ingredients: In a 9x13 inch baking dish, spread 1 cup of marinara sauce evenly on the bottom. Layer half of the zucchini noodles over the sauce, followed by half of the cheese mixture. Repeat the layers with the remaining zucchini noodles, cheese mixture, and top with the remaining marinara sauce.

          Top with Cheese: Sprinkle the remaining mozzarella cheese (½ cup) and Parmesan cheese (½ cup) on the top layer to create a cheesy crust.

            Drizzle Olive Oil: Lightly drizzle olive oil over the top to help with browning.

              Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 15-20 minutes, or until the cheese is golden and bubbly.

                Cool and Serve: Let the bake cool for about 5-10 minutes before serving. Garnish with fresh basil leaves if desired.
