Parmesan Crusted Turkey Cutlets

4 boneless, skinless turkey cutlets

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

¼ cup all-purpose flour

3 tablespoons olive oil (for frying)

Optional: lemon wedges and fresh parsley for garnish

Instructions
 

Prepare the Cutlets: Place the turkey cutlets between two sheets of plastic wrap or parchment paper. Gently pound them to about ½ inch thickness using a meat mallet or rolling pin for even cooking.

    Set Up Breading Station: In three separate shallow dishes, place the flour in the first, beat the eggs in the second, and combine the Parmesan cheese, panko breadcrumbs, garlic powder, dried herbs, salt, and pepper in the third.

      Bread the Cutlets: Dredge each turkey cutlet in the flour, coating both sides and shaking off the excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, press it into the Parmesan breadcrumb mixture, ensuring it’s fully coated on both sides.

        Heat the Oil: In a large skillet, heat the olive oil over medium heat until shimmering.

          Cook the Cutlets: Carefully place the coated turkey cutlets in the skillet. Cook for about 4-5 minutes on each side or until they are golden brown and cooked through (internal temperature should reach 165°F / 74°C). Work in batches if necessary, adding more oil as needed.

            Serve: Once done, transfer the turkey cutlets to a paper towel-lined plate to absorb excess oil. Serve hot, garnished with lemon wedges and fresh parsley if desired.
