Oven Roasted Garlic Tomato Soup

2 lbs ripe tomatoes (such as Roma or beefsteak), halved

1 whole bulb of garlic

1 medium onion, chopped

1 carrot, diced

1 celery stalk, diced

4 cups vegetable broth (low-sodium)

1 tablespoon olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh basil leaves for garnish

Optional: 1/2 cup heavy cream or coconut milk for creaminess

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Tomatoes and Garlic: Place the halved tomatoes cut-side up on a large baking sheet. Drizzle with olive oil and season with salt, pepper, basil, and oregano. Take the whole bulb of garlic, cut off the top, drizzle with a little olive oil, wrap in aluminum foil, and place on the baking sheet next to the tomatoes.

      Roast: Roast in the oven for about 30-35 minutes, until the tomatoes are slightly caramelized and the garlic is soft (you may want to check the garlic after 25 minutes).

        Sauté Vegetables: While the tomatoes and garlic are roasting, heat a large pot over medium heat. Add a drizzle of olive oil, then add the chopped onion, carrot, and celery. Sauté until the vegetables are soft and the onion is translucent (about 5-7 minutes).

          Blend: Once the tomatoes and garlic are done roasting, add them (squeezing the soft garlic out of its skin) to the pot with vegetables. Pour in the vegetable broth and bring to a simmer.

            Simmer: Allow the soup to simmer on low heat for approximately 15-20 minutes, letting the flavors meld together.

              Puree: Using an immersion blender, blend the soup until smooth. If you prefer, you can carefully transfer it to a blender in batches.

                Cream Optional: If you’d like a creamy tomato soup, stir in the heavy cream or coconut milk and heat through on low for another 5 minutes.

                  Taste & Adjust: Taste your soup and adjust seasoning with more salt and pepper if necessary.

                    Serve: Ladle the soup into bowls, garnish with fresh basil leaves, and optionally a drizzle of olive oil. Serve hot with crusty bread or grilled cheese for a perfect meal!
