1 large green cabbage

4 tablespoons olive oil

6 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon sea salt

½ teaspoon freshly ground black pepper

1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)

Optional: 2 tablespoons balsamic vinegar

Optional: Fresh parsley, chopped for garnish

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Cabbage: Remove any outer leaves from the cabbage. Cut the cabbage into 1-inch thick slices (steaks) from top to bottom. You should end up with about 4-6 cabbage steaks depending on the size of your cabbage.

      Make the Garlic Oil: In a small bowl, combine the olive oil, minced garlic, smoked paprika, sea salt, black pepper, and thyme. Stir well to create a fragrant garlic oil mixture.

        Brush the Cabbage: Place the cabbage steaks on a baking sheet lined with parchment paper. Generously brush both sides of each cabbage steak with the garlic oil mixture, ensuring they are well coated.

          Roast the Cabbage: Roast in the preheated oven for about 25 minutes. Halfway through, carefully flip the cabbage steaks to ensure even cooking and browning.

            Add Optional Balsamic Glaze: If using, drizzle the balsamic vinegar over the cabbage steaks when you flip them, enhancing their flavor with a sweet and tangy touch.

              Check for Doneness: The cabbage should be tender and caramelized at the edges. If you prefer them more charred, you can roast for an additional 5-10 minutes, keeping an eye on them to prevent burning.
