Oreo Cheesecake Bars

24 Oreo cookies, crushed

4 tablespoons unsalted butter, melted

For the cheesecake filling:

16 oz (2 packages) cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

12 Oreo cookies, coarsely chopped

For the topping (optional):

Whipped cream

Prepare the crust:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine the crushed Oreo cookies with melted butter. Stir until the mixture resembles wet sand.

        - Press the mixture evenly into the bottom of a 9x9 inch (22x22 cm) baking dish to form a crust. Bake for 10 minutes, then remove from the oven and allow to cool slightly.

          Make the cheesecake filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2 minutes.

              - Gradually add the sugar, continuing to mix until fully combined.

                - Add the vanilla extract and mix in the eggs, one at a time, until just combined. Be careful not to overmix.

                  - Gently fold in the coarsely chopped Oreo cookies.

                    Assemble the bars:

                      - Pour the cheesecake mixture over the prepared crust and spread it evenly using a spatula.

                        - Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center has a slight jiggle.

                          Cool and chill:

                            - Allow the cheesecake bars to cool at room temperature for about 1 hour, then cover and refrigerate for at least 4 hours, preferably overnight.

                              Serve:

                                - Once chilled, lift the cheesecake out of the pan using the edges of the parchment paper, if used.
