14 oz firm tofu, pressed and cubed

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup broccoli florets

1 cup sugar snap peas

3 green onions, chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup fresh orange juice

Zest of 1 orange

2 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons maple syrup or honey

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Salt and pepper to taste

Sesame seeds for garnish

Press the Tofu: Place the cubed tofu between paper towels or a clean kitchen towel, and set a heavy object on top to remove excess moisture for about 15-20 minutes. This helps the tofu absorb flavor and achieve a nice texture when cooked.

    Prepare the Orange Glaze: In a small bowl, mix together the fresh orange juice, orange zest, soy sauce, maple syrup, and a pinch of salt and pepper. Set aside.

      Sauté the Tofu: In a large nonstick skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 8-10 minutes. Remove the tofu from the skillet and set aside.

        Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Sauté the minced garlic and grated ginger for about 30 seconds until fragrant. Then, add the sliced red and yellow bell peppers, broccoli florets, and sugar snap peas. Stir-fry for 5-7 minutes or until the vegetables are vibrant and tender-crisp.

          Combine Tofu and Glaze: Return the golden tofu to the skillet with the vegetables. Pour the orange glaze over the tofu and vegetables. Stir gently to coat everything evenly.

            Thicken the Sauce: Add the cornstarch slurry to the skillet and stir continuously for 1-2 minutes until the sauce thickens and clings to the tofu and vegetables.

              Final Touches: Remove from heat and sprinkle with chopped green onions and sesame seeds. Adjust seasoning with more salt and pepper if desired.
