One-Skillet Chicken Fajita Quinoa Bowl

1 lb boneless, skinless chicken breasts, cut into thin strips

1 cup quinoa, rinsed

2 cups low-sodium chicken broth (or water)

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, thinly sliced

3 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon oregano

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Prepare the Chicken: Season the chicken strips with chili powder, cumin, smoked paprika, oregano, salt, and pepper in a bowl. Ensure the chicken is well-coated in the spices.

    Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken to the skillet and cook for 5-7 minutes, or until it's browned and cooked through. Remove the chicken from the skillet and set it aside.

      Sauté the Vegetables: In the same skillet, add the sliced onion and bell peppers. Sauté for about 4-5 minutes until the vegetables are soft and starting to caramelize. Add the minced garlic and cook for an additional 1 minute, until fragrant.

        Cook the Quinoa: Pour in the rinsed quinoa and chicken broth (or water). Stir to combine and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet, and simmer for about 15-20 minutes, or until the quinoa is cooked and has absorbed all the liquid.
