12 oz spaghetti

4 cups vegetable or chicken broth

4 tablespoons olive oil

4 cloves garlic, finely minced

1 medium onion, diced

1 teaspoon red pepper flakes (adjust for heat preference)

1 teaspoon dried oregano

1 teaspoon kosher salt (or to taste)

½ teaspoon black pepper

Zest of 1 lemon

Juice of 1 lemon

1 cup cherry tomatoes, halved

1 cup baby spinach

½ cup grated Parmesan cheese (optional)

Fresh basil leaves for garnish

Sauté Aromatics: In a large pot over medium heat, add the olive oil. Once warmed, add the minced garlic and diced onion. Sauté for about 2-3 minutes until the onion becomes translucent and the garlic is fragrant, making sure not to brown the garlic.

      Cook Spaghetti: Pour in the broth and bring it to a boil. Once boiling, add the spaghetti, making sure it’s submerged in the broth. Reduce the heat to a simmer, cover the pot, and cook for 9-11 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.

        Incorporate Fresh Ingredients: Add the lemon zest, lemon juice, cherry tomatoes, and baby spinach to the pot. Stir gently to combine, allowing the spinach to wilt and the tomatoes to soften, about 2-3 minutes.
