4 large yellow onions, thinly sliced

4 cloves garlic, minced

4 cups vegetable broth (or beef broth for a richer flavor)

1 cup dry white wine (optional; for added depth)

1 tablespoon balsamic vinegar

2 tablespoons unsalted butter

2 tablespoons olive oil

1 teaspoon thyme (dried or fresh)

1 teaspoon sugar (to help caramelize onions)

1 cup grated Gruyère cheese (or Swiss)

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Caramelize the Onions: In a large pot or deep skillet, heat the olive oil and butter over medium heat. Add the sliced onions and sprinkle with salt and sugar. Stir occasionally, allowing them to cook slowly for about 15-20 minutes until they become golden brown and caramelized.

    Add Garlic and Herbs: Once the onions are caramelized, add the minced garlic and thyme. Cook for another 1-2 minutes until fragrant.
