One-Pot Cheesy Broccoli and Rice Casserole

1 cup white or brown rice (uncooked)

2 cups vegetable broth

2 cups broccoli florets (fresh or frozen)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 tablespoon olive oil

1/2 cup grated Parmesan cheese (for topping)

Optional: 1/4 cup breadcrumbs (for extra crunch)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Add the uncooked rice to the pot, stirring to coat it in the oil and onion mixture. Cook for 1-2 minutes to lightly toast the rice.

      Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 15 minutes.

        After 15 minutes, gently mix in the broccoli florets, dried thyme, paprika, salt, and black pepper. Cover the pot again and continue to cook for another 5-7 minutes, or until the rice is tender and the liquid is absorbed.

          Remove the pot from heat and stir in the sharp cheddar and mozzarella cheese until melted and creamy. Adjust seasoning if needed.

            Preheat your oven to 375°F (190°C) if you prefer a baked crust. Transfer the mixture to a greased baking dish if baking.

              Sprinkle the top with grated Parmesan cheese and breadcrumbs (if using) for a crunchy topping.

                Bake in the preheated oven for 15-20 minutes until the top is golden and bubbly.
