1 lb (450g) beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

3 garlic cloves, minced

8 oz (225g) mushrooms, sliced

1 teaspoon dried thyme

1 teaspoon paprika

2 cups beef broth

1 cup sour cream

3 tablespoons all-purpose flour

3 cups egg noodles

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the sliced beef and season with salt and pepper. Cook until browned on all sides, about 3-4 minutes. Remove from the pot and set aside.

    Cook the Vegetables: In the same pot, add the chopped onion and sauté for about 2-3 minutes until translucent. Stir in the minced garlic and sliced mushrooms, cooking for another 5 minutes until mushrooms are tender.

      Add Spices: Sprinkle in the dried thyme and paprika, stirring to combine with the vegetables, and cook for an additional minute to release the spices' aromas.

        Make the Sauce: Sprinkle the flour over the vegetable mixture and stir well to coat. Gradually pour in the beef broth while stirring constantly to prevent lumps. Bring the mixture to a gentle simmer.

          Combine Everything: Return the cooked beef to the pot and stir in the egg noodles. Cover the pot and let it simmer for about 10-12 minutes, or until the noodles are al dente and have absorbed some of the broth.

            Finish with Cream: Reduce the heat to low and stir in the sour cream until smooth and creamy. Adjust seasoning with salt and pepper to taste.
