4 (6 oz) salmon fillets

1 cup broccoli florets

2 cups cauliflower rice

1/4 cup teriyaki sauce (store-bought or homemade)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame seeds

2 green onions, sliced

Salt and pepper to taste

Lemon wedges for serving

Instructions
 

Preheat your oven to 400°F (200°C).

    Prepare the broccoli rice: In a food processor, pulse the broccoli florets until they resemble rice grains. You can also use pre-packaged broccoli rice if needed.

      Season the salmon: Pat the salmon fillets dry with a paper towel. Season both sides with salt and pepper.

        Sauté garlic and ginger: In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant (about 1 minute).

          Add the broccoli rice: Add the broccoli rice to the skillet, stirring to combine with the garlic and ginger. Sauté for about 3-4 minutes until tender.

            Add the salmon: Push the broccoli rice to the edges of the skillet and place the seasoned salmon fillets in the center. Pour teriyaki sauce over the salmon fillets.

              Sprinkle sesame seeds: Evenly sprinkle sesame seeds over the salmon and broccoli rice.

                Bake: Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

                  Garnish: Once out of the oven, let it rest for a few minutes before garnishing with sliced green onions.
