2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 (14.5 oz) can diced tomatoes (with juices)

2 cups vegetable broth

1 (9 oz) package of cheese tortellini (fresh or frozen)

1 cup heavy cream

1 cup baby spinach

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

In a large skillet or pan, heat the olive oil over medium heat.

    Add the chopped onion and sauté for about 5 minutes, or until soft and translucent.

      Stir in the minced garlic and red pepper flakes, cooking for an additional 1-2 minutes until fragrant.

        Pour in the diced tomatoes (including the juices) and vegetable broth. Increase the heat and bring to a gentle simmer.
