Ingredients

4 salmon fillets (6 oz each)

1 bunch asparagus, trimmed

2 tablespoons olive oil

2 tablespoons fresh lemon juice

Zest of 1 lemon

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Lemon slices, for garnish

Fresh parsley, chopped for garnish

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C).

Prepare the Marinade: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper until well combined.

Marinate Salmon: Place the salmon fillets in a shallow dish and pour half of the marinade over them. Make sure the salmon is evenly coated. Let it marinate for about 15 minutes while you prepare the asparagus.

Prep the Asparagus: On a large baking sheet, arrange the trimmed asparagus. Drizzle with the remaining marinade and sprinkle with salt and pepper. Toss to coat them evenly.

Add Salmon to the Sheet: After marinating, place the salmon fillets skin-side down on the same baking sheet with asparagus. Arrange the lemon slices on top of the salmon for extra flavor.

Bake Everything Together: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender.

Garnish and Serve: Remove from the oven, garnish with fresh parsley, and serve warm. Enjoy your lively one-pan meal accompanied by your favorite side!
