Ingredients

4 salmon fillets (6 oz each)

1 lb asparagus, trimmed

4 tablespoons olive oil

3 tablespoons fresh lemon juice (about 1 large lemon)

Zest of 1 lemon

2 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme leaves

Salt and pepper to taste

Lemon slices, for garnish

Fresh parsley, for garnish

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C).

Prepare Marinade: In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, chopped rosemary, thyme, salt, and pepper.

Marinate Salmon: Place the salmon fillets in a shallow dish or a zip-top bag. Pour half of the marinade over the salmon, ensuring each fillet is coated. Let it marinate for about 15 minutes.

Arrange Asparagus: On a large baking sheet, arrange the trimmed asparagus in a single layer. Drizzle with the remaining marinade and sprinkle with salt and pepper.

Add Salmon: After marinating, remove the salmon from the dish and place it skin-side down on the same baking sheet with the asparagus.

Bake: Transfer the baking sheet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The asparagus should be tender yet still vibrant.

Garnish: Once done, remove from the oven and garnish with fresh parsley and additional lemon slices.

Serve: Serve hot, enjoying the vibrant flavors of the salmon and asparagus combined with zesty lemon and herbs.
