4 boneless, skinless chicken breasts

3 tablespoons olive oil

4 cloves garlic, minced

1 lemon, zested and juiced

1 teaspoon dried oregano

1 teaspoon paprika

1 cup cherry tomatoes, halved

1 bell pepper, sliced (red or yellow for color)

1 medium zucchini, sliced into half-moons

1 cup broccoli florets

Fresh parsley, chopped, for garnish

Lemon wedges, for serving

Prepare the Chicken Marinade: In a large mixing bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, dried oregano, paprika, salt, and pepper. Add the chicken breasts to the marinade, ensuring they are evenly coated. Allow them to marinate for at least 15 minutes (up to 2 hours in the refrigerator for more flavor).

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Prepare the Veggies: On a large baking sheet or oven-safe skillet, add the cherry tomatoes, bell pepper slices, zucchini, and broccoli florets. Drizzle with a little olive oil and a pinch of salt and pepper, then toss to combine.
