4 boneless, skinless chicken thighs

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

Juice and zest of 1 large lemon

Salt and pepper, to taste

2 cups broccoli florets

1 medium red bell pepper, sliced

1 medium zucchini, sliced

1 medium onion, sliced

Fresh parsley, chopped (for garnish)

Prep the Chicken: In a large bowl, combine the olive oil, minced garlic, oregano, thyme, smoked paprika, lemon juice, lemon zest, salt, and pepper. Mix well. Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 20 minutes (or up to overnight in the refrigerator for deeper flavor).

    Preheat the Pan: In a large oven-safe skillet or pan, heat a little olive oil over medium-high heat until shimmering.

      Sear the Chicken: Remove the chicken from the marinade (reserve the marinade) and add the chicken thighs to the hot pan. Sear each side for about 4-5 minutes until they are golden brown. Remove from the pan and set aside.

        Sauté the Veggies: In the same pan, add the sliced onion, bell pepper, zucchini, and broccoli. Sauté for about 5-7 minutes until they begin to soften.

          Combine Chicken and Veggies: Return the chicken to the pan, placing it on top of the sautéed vegetables. Drizzle the reserved marinade over everything.
