Ingredients

4 (6 oz) salmon fillets, skin-on preferred

1 cup broccoli florets

1 red bell pepper, sliced into strips

1 cup snap peas

3 tablespoons honey

3 tablespoons soy sauce (low sodium)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

Salt and pepper, to taste

1 tablespoon sesame seeds (for garnish)

2 green onions, sliced (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Marinade: In a small bowl, whisk together the honey, soy sauce, olive oil, minced garlic, and ginger until well combined.

Marinate the Salmon: Place the salmon fillets in a shallow dish or zip-top bag and pour half of the marinade over the fish. Allow it to marinate for at least 15 minutes while preparing the veggies.

Prepare the Vegetables: In a large bowl, combine the broccoli, red bell pepper, and snap peas. Drizzle the remaining marinade over the vegetables and toss to coat evenly.

Assemble on Baking Sheet: On the prepared baking sheet, arrange the marinated salmon fillets, skin-side down, and surround them with the coated veggies.

Bake: Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork, and the veggies are tender yet crisp.

Garnish and Serve: Once done, remove from the oven and let rest for a couple of minutes. Sprinkle with sesame seeds and sliced green onions before serving.

Enjoy: Serve hot, drizzled with any remaining glaze from the baking sheet.
