Ingredients

1 lb (450g) boneless skinless chicken breasts, sliced into strips

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1 red bell pepper, sliced

1 green bell pepper, sliced

1 yellow onion, sliced

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Tortillas, for serving

Optional toppings: sour cream, guacamole, salsa, shredded cheese

Instructions

Marinate the Chicken: In a bowl, combine sliced chicken with olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Toss until chicken is well-coated. Let it marinate for at least 15 minutes to absorb the flavors.

Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the marinated chicken strips. Sear for about 5 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the pan and set it aside.

Sauté the Vegetables: In the same skillet, add the sliced bell peppers and onion. Cook for about 5-7 minutes, stirring frequently until they are softened and slightly caramelized.

Combine and Season: Return the cooked chicken to the skillet with the peppers and onions. Squeeze the lime juice over the mixture and stir well to combine everything. Cook for an additional 2-3 minutes to allow the flavors to meld.

Garnish and Serve: Remove from heat and sprinkle fresh chopped cilantro on top. Serve immediately with warm tortillas and your choice of optional toppings like sour cream, guacamole, salsa, or shredded cheese.
