One-Pan Cheesy Chicken Broccoli and Rice

1 lb boneless, skinless chicken breast, cubed

1 cup long-grain white rice

2 cups chicken broth (low sodium)

1 cup broccoli florets (fresh or frozen)

1 cup shredded cheddar cheese (plus extra for topping)

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon paprika

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté the Chicken: In a large skillet or pan, heat olive oil over medium heat. Season the cubed chicken with paprika, garlic powder, onion powder, salt, and pepper. Add the chicken to the skillet and cook for about 5-7 minutes, or until golden brown. Remove the chicken from the pan and set aside.

    Cook the Aromatics: In the same pan, add the diced onion and sauté for 2-3 minutes, until translucent. Add the minced garlic and sauté for an additional minute, just until fragrant.

      Combine Rice and Broth: Stir in the rice and mix well with the onions and garlic. Pour in the chicken broth and bring to a gentle boil.

        Add Chicken and Broccoli: Once boiling, reduce the heat to low, return the cooked chicken to the pan, and gently mix in the broccoli florets. Cover the pan tightly with a lid and let it simmer for about 15-18 minutes, or until the rice is tender and has absorbed the broth.

          Add Cheese: Remove the lid and stir in the shredded cheddar cheese until melted and creamy. Taste and adjust seasoning if necessary.
