One-Pan Cheesy Broccoli and Rice Casserole

1 cup long-grain white rice

2 cups vegetable broth (or chicken broth)

2 cups fresh broccoli florets (or frozen, thawed)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

2 tablespoons olive oil

½ cup heavy cream (or a dairy-free alternative)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Aromatics: In a large oven-safe skillet or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in minced garlic and cook for another minute until fragrant.

      Add Rice and Broth: Add the long-grain rice to the skillet, stirring to coat it in the oil. Pour in the vegetable broth, and add the garlic powder, onion powder, paprika, black pepper, and salt. Mix well and bring to a gentle boil.

        Mix in Broccoli: Once boiling, reduce the heat to low and fold in the broccoli florets. Cover the skillet with a lid and let it simmer for about 15-20 minutes, or until the rice is tender and most of the liquid is absorbed.

          Create the Cheese Mixture: In a bowl, combine the shredded cheddar cheese, mozzarella cheese, and heavy cream. Stir until well combined.

            Combine and Bake: After the rice is cooked, remove the skillet from heat and pour the cheese mixture over the rice and broccoli. Gently stir everything together until the cheese is evenly distributed.

              Bake: Place the covered skillet in the preheated oven and bake for 15-20 minutes until the cheese is melted and bubbly. If you like a golden top, remove the lid for the last 5 minutes of baking.

                Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving. Enjoy your cheesy goodness!
