Ingredients

2 cups rolled oats

2 cups almond milk (or your preferred milk)

2 large apples, peeled and diced (preferably Granny Smith or Honeycrisp)

1/2 cup brown sugar (or maple syrup for a healthier option)

1/2 cup unsweetened applesauce

1/2 cup chopped walnuts (optional)

1 teaspoon ground cinnamon

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 teaspoon baking powder

1/4 cup dried cranberries or raisins (optional)

Fresh apple slices and additional cinnamon for topping

Instructions

Preheat the oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.

Mix the wet ingredients: In a large mixing bowl, combine the almond milk, applesauce, and vanilla extract. Stir in the brown sugar until well combined.

Add the dry ingredients: In another bowl, mix together the rolled oats, cinnamon, salt, and baking powder. Slowly add this dry mixture to the wet ingredients, stirring until fully integrated.

Incorporate the apples and nuts: Gently fold in the diced apples and walnuts (if using), along with the dried cranberries or raisins for an extra sweet and chewy texture.

Pour into pan: Transfer the mixture into the prepared baking dish, spreading it evenly. Press down slightly to ensure it’s compact.

Add toppings: Arrange fresh apple slices on top and sprinkle with additional cinnamon. This will enhance the flavor and presentation of the bake.

Bake: Place the dish in the preheated oven and bake for about 35-40 minutes, or until the top is golden and the mixture is set.

Cool and serve: Once baked, allow to cool for a few minutes before slicing. Serve warm, either as is or with a dollop of yogurt or a drizzle of honey as desired.
