1 cup rolled oats

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey (or maple syrup for a vegan option)

1/2 cup mixed nuts (almonds, walnuts, pecans) chopped

1/2 cup dried fruits (raisins, cranberries, apricots) chopped

1/4 cup mini chocolate chips (or carob chips for a healthier option)

1/4 teaspoon sea salt

1/2 teaspoon cinnamon (optional)

Instructions
 

Prepare the Pan: Line an 8x8 inch square baking dish with parchment paper, letting some overhang the edges for easy removal later.

    Mix the Wet Ingredients: In a large mixing bowl, combine the almond butter and honey (or maple syrup). Stir until well blended and smooth. If your nut butter is too thick, you can gently warm it in the microwave for 15-20 seconds to make it easier to mix.

      Combine Ingredients: Add the rolled oats, chopped mixed nuts, dried fruit, sea salt, cinnamon (if using), and chocolate chips to the bowl. Stir well until everything is thoroughly coated in the almond butter mixture.

        Press Mixture into Pan: Transfer the mixture into the prepared baking dish. Using a spatula or your hands (dampen them slightly to prevent sticking), press the mixture firmly and evenly into the pan. The tighter you pack it, the firmer your bars will be!

          Chill: Cover the pan with plastic wrap or foil and refrigerate for at least 1-2 hours, or until the bars are firm and set.

            Slice and Serve: Once set, lift the bars out of the pan using the overhanging parchment paper. Place them on a cutting board and cut into bars or squares of your desired size.

              Storage: Store the energy bars in an airtight container in the refrigerator for up to 2 weeks, or freeze for longer storage (up to 3 months).
