No-Bake Strawberry Shortcake Bites

1 cup graham cracker crumbs

1/4 cup melted unsalted butter

2 tablespoons granulated sugar

1 cup heavy whipping cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and sliced

Fresh mint leaves, for garnish (optional)

Instructions
 

Prepare the Base: In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and the mixture resembles wet sand.

    Form the Base: Use a mini muffin tin or small silicone molds. Press about 1 tablespoon of the graham cracker mixture into the bottom of each cup, creating a firm base. Make sure to press it down evenly.

      Chill the Base: Place the muffin tin or molds in the refrigerator for about 15 minutes to set the crust.

        Whip the Cream: In a separate mixing bowl, whip the heavy cream until soft peaks begin to form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.

          Layer the Cream: Once the crusts are set, remove them from the fridge. Spoon about 1 tablespoon of whipped cream over the crust in each cup, smoothing it out evenly.

            Add the Strawberries: Place a few slices of fresh strawberries on top of the whipped cream layer in each cup. You can layer some whipped cream on top of the strawberries for a more elevated look if desired.

              Final Chill: Return the assembled bites to the refrigerator for at least 30 minutes to allow the flavors to meld and the dessert to firm up.

                Serve and Garnish: Just before serving, garnish with a mint leaf on top of each bite for a lovely touch. Enjoy!
