1 cup graham cracker crumbs

1/4 cup unsweetened cocoa powder

1/4 cup powdered sugar

1/2 cup unsalted butter, melted

1 (8 oz) package cream cheese, softened

1 cup confectioners' sugar

1/2 cup fresh lemon juice (about 2-3 lemons)

Zest of 1 lemon

1 cup fresh raspberries (plus extra for garnish)

1 teaspoon vanilla extract

A pinch of salt

Prepare the Crust:

    In a medium mixing bowl, combine the graham cracker crumbs, unsweetened cocoa powder, powdered sugar, and melted butter. Mix until the crumbs are well coated and the mixture resembles wet sand. Press the mixture firmly into the bottom of a 9x9-inch baking pan to create an even layer. Set aside.

      Make the Filling:

        In a large bowl, beat the softened cream cheese using an electric mixer until smooth and creamy. Gradually add the confectioners' sugar, mixing well after each addition.

          Add Lemon Flavor:

            Mix in the fresh lemon juice, lemon zest, vanilla extract, and a pinch of salt. Continue to mix until the filling is smooth and well combined.

              Incorporate Raspberries:

                Gently fold in the fresh raspberries, being careful not to crush them too much. If desired, reserve a few for garnishing the top at the end.

                  Assemble the Bars:

                    Pour the lemon-raspberry filling over the prepared crust and spread it evenly using a spatula.

                      Chill to Set:

                        Cover the pan with plastic wrap or aluminum foil and refrigerate the bars for at least 4 hours, or until firm.

                          Serve:
