Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 (14 oz) can sweetened condensed milk

½ cup fresh lemon juice (about 3-4 lemons)

Zest of 2 lemons

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 tablespoons powdered sugar (optional)

Lemon slices and mint leaves for garnish

Instructions

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the mixture resembles wet sand. Press this mixture firmly into the bottom and up the sides of a 9-inch pie dish to create an even crust. Chill in the refrigerator while you prepare the filling.

Make the Filling: In a large mixing bowl, whisk together the sweetened condensed milk, fresh lemon juice, lemon zest, and vanilla extract until smooth and well combined.

Whip the Cream: In a separate bowl, using an electric mixer, whip the heavy cream until soft peaks form. If you prefer a sweeter filling, add the powdered sugar at this stage and continue whisking until stiff peaks form.

Combine Mixtures: Gently fold the whipped cream into the lemon mixture. Make sure to do this slowly to keep the mixture light and fluffy. You want to maintain the air in the cream for a light texture.

Fill the Crust: Pour the lemon filling into the chilled graham cracker crust, spreading it evenly with a spatula. Smooth the top and cover it loosely with plastic wrap.

Chill: Place the lemon pie back in the refrigerator and chill for at least 4 hours, or overnight for best results. This allows the pie to set properly.

Serve: Before serving, garnish with fresh lemon slices and mint leaves for a burst of color and flavor. Cut into slices, serve, and enjoy your refreshing no-bake lemon pie!
