2 cups heavy whipping cream

1 cup powdered sugar

1 teaspoon pure vanilla extract

1 cup freshly squeezed lemon juice (about 4-5 lemons)

Zest of 2 lemons

1 package (14 oz) graham crackers

Fresh raspberries or blueberries for garnish (optional)

Extra lemon zest for garnish (optional)

Prepare the Whipped Cream: In a large mixing bowl, pour in the heavy whipping cream and add the powdered sugar and vanilla extract. Using an electric mixer, beat on medium-high speed until stiff peaks form, about 3-5 minutes. Be careful not to overmix.
