No-Bake Energy Bites

1 cup rolled oats

1/2 cup natural nut butter (almond or peanut)

1/3 cup honey or maple syrup

1/4 cup mini dark chocolate chips

1/4 cup ground flaxseed

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

Optional: 1/4 cup chopped nuts (walnuts or pecans) or seeds (chia or pumpkin)

Instructions
 

Combine Dry Ingredients: In a mixing bowl, combine the rolled oats, ground flaxseed, mini dark chocolate chips, and sea salt. If you're using any chopped nuts or seeds, add them in at this stage too.

    Mix Wet Ingredients: In a separate bowl, mix together the natural nut butter, honey (or maple syrup), and vanilla extract until well blended and smooth.

      Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until everything is evenly incorporated. The mixture should be sticky and hold together. If it’s too crumbly, you can add a little more nut butter or honey to help bind it.

        Chill Out: Once the mixture is well combined, cover the bowl with plastic wrap and place it in the refrigerator for about 30 minutes. This will make it easier to form into bites.

          Form Bites: After chilling, use your hands to scoop out about 1 tablespoon of the mixture and roll it into a ball. Place each ball on a baking sheet lined with parchment paper. Continue until all mixture is used.

            Final Chill: Refrigerate the energy bites for an additional 30 minutes to firm them up.

              Store & Enjoy: Once set, store the energy bites in an airtight container in the refrigerator for up to a week, or freeze them for longer storage. Grab one (or two!) whenever you need a quick energy boost throughout the day.
