Ingredients

1 cup almond flour

1/2 cup rolled oats

1/3 cup maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/4 teaspoon salt

3/4 cup mini chocolate chips

1/4 cup chopped walnuts (optional)

Additional chocolate chips for topping (optional)

Instructions

Prepare the Baking Dish: Line an 8x8 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later.

Mix Dry Ingredients: In a mixing bowl, combine almond flour, rolled oats, and salt. Stir gently until combined.

Combine Wet Ingredients: In another bowl, whisk together maple syrup, melted coconut oil, and vanilla extract until smooth.

Combine Mixtures: Pour the wet mixture into the dry ingredients. Using a spatula or your hands, mix until a soft dough forms. It should be slightly sticky but hold together.

Add Chocolate Chips and Walnuts: Fold in mini chocolate chips and chopped walnuts (if using) until evenly distributed.

Press into Pan: Transfer the dough into the prepared baking dish. Use your hands or the back of a spatula to press it down evenly and compactly.

Chill Bars: Cover the pan with plastic wrap or foil and refrigerate for at least 1-2 hours until firm.

Cut and Serve: Once set, lift the bars out of the pan using the parchment overhang. Cut into squares or rectangles, and sprinkle additional chocolate chips on top, if desired.

Store: Store the bars in an airtight container in the fridge for up to one week, or enjoy them straight away!
