2 cups fresh or frozen cherries, pitted

1 tablespoon sugar (adjust based on cherry sweetness)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup heavy whipping cream

8 ounces cream cheese, softened

3/4 cup powdered sugar

1 teaspoon vanilla extract (for whipped cream)

1 cup graham cracker crumbs

1/2 cup slivered almonds or chopped walnuts (optional, for crunch)

Fresh mint leaves (for garnish)

Instructions
 

Prepare the Cherry Mixture: If using fresh cherries, wash and pit them, then chop them roughly. If using frozen, thaw and drain any excess juice. In a medium bowl, combine the cherries, sugar, lemon juice, and vanilla extract. Toss to coat and set aside for at least 15 minutes to let the flavors meld.

    Make the Cream Cheese Mixture: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and the additional teaspoon of vanilla extract, blending until creamy and combined.

      Whip the Cream: In a separate bowl, whip the heavy cream to soft peaks. Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Be careful not to deflate the whipped cream.

        Layer the Parfaits: In a clear glass or parfait cup, begin with a layer of graham cracker crumbs (about 2 tablespoons), followed by a layer of the cherry mixture (about 2 tablespoons). Then, add a layer of the cream cheese mixture (about 3 tablespoons). Repeat the layers until you reach the top of the glass, finishing with a cherry layer.
