1 cup Medjool dates, pitted

1 cup raw walnuts

1/4 cup unsweetened cocoa powder

1/4 teaspoon sea salt

1 teaspoon pure vanilla extract

1/4 cup almond flour (or oats for a gluten-free option)

1/4 cup dark chocolate chips (optional, for extra richness)

Unsweetened shredded coconut or chopped nuts (for rolling, optional)

Instructions
 

In a food processor, combine the pitted Medjool dates and raw walnuts. Pulse until the mixture is crumbly but sticks together when pressed, about 10-15 seconds.

    Add in the unsweetened cocoa powder, sea salt, pure vanilla extract, and almond flour. Process until the ingredients are well combined and form a sticky dough, scraping down the sides as necessary. If you're using dark chocolate chips, fold them in at this stage using a spatula.
