2 cups fresh spinach, washed and chopped

1 cup cremini or button mushrooms, finely chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese (plus extra for topping)

1/4 cup grated Parmesan cheese

1 clove garlic, minced

Salt and pepper to taste

1 tablespoon olive oil

1 teaspoon dried Italian herbs (oregano, basil, thyme)

For the Lasagna:

8-10 lasagna noodles (preferably oven-ready)

2 cups marinara sauce (store-bought or homemade)

Fresh basil, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling:

      - In a large skillet, heat the olive oil over medium heat.

        - Add the minced garlic and sauté for 1 minute until fragrant.

          - Stir in the chopped mushrooms and cook for about 5-7 minutes, until they release their moisture and become tender.

            - Add the chopped spinach to the skillet and cook for another 3-4 minutes until wilted. Season with salt, pepper, and dried Italian herbs.

              - Remove from heat and let the mixture cool slightly.

                - In a mixing bowl, combine the mushroom-spinach mixture with ricotta, mozzarella, and Parmesan cheese. Mix well until fully combined.

                  Prepare the Lasagna Rolls:

                    - Boil the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to cool slightly.

                      - Spread a thin layer of marinara sauce over the bottom of a baking dish (about 1 cup).

                        Assemble the Rolls:

                          - Take one lasagna noodle and place a generous spoonful of the mushroom and spinach filling along one end.

                            - Roll the noodle tightly around the filling and place seam-side down in the baking dish. Repeat with remaining noodles and filling.

                              Top with Sauce and Cheese:

                                - Once all rolls are in the dish, pour the remaining marinara sauce evenly over the top.

                                  - Sprinkle additional mozzarella cheese over the sauce.

                                    Bake:

                                      - Cover the baking dish with aluminum foil (to prevent sticking, you can spray the foil with a little oil) and bake for 25 minutes.

                                        - Remove the foil and bake for an additional 15-20 minutes, until the cheese is bubbly and golden brown.

                                          Garnish and Serve:

                                            - Once done, take the lasagna rolls out of the oven and let them rest for about 5 minutes.

                                              - Garnish with fresh basil leaves before serving.
