4 medium zucchinis

1 cup fresh mozzarella cheese, diced

1 cup cherry tomatoes, halved

1/2 cup fresh basil leaves, chopped

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper, to taste

Balsamic glaze (for drizzling, optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Cut the zucchinis in half lengthwise and scoop out the insides using a spoon, leaving about 1/4 inch of the flesh intact to create a “boat” shape. Reserve the scooped-out zucchini flesh for later use.

      Make the Filling: In a large mixing bowl, combine the diced mozzarella cheese, halved cherry tomatoes, chopped basil, grated Parmesan cheese, minced garlic, and the reserved zucchini flesh. Drizzle with olive oil, and season with salt and pepper. Mix until well combined.

        Stuff the Zucchini Boats: Spoon the filling mixture generously into each hollowed zucchini half, pressing down slightly to ensure it’s packed in well.

          Bake: Place the stuffed zucchini boats into a baking dish. If desired, drizzle a little olive oil over the tops for added flavor. Bake in the preheated oven for 20-25 minutes, or until the zucchinis are tender and the cheese is bubbling and golden.
