2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1 tablespoon sugar

2 large eggs

1 ¾ cups milk

½ cup vegetable oil

1 pound chicken tenders

1 cup buttermilk (for marinating)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon black pepper

1 cup ranch dressing

1 cup shredded lettuce

1 cup diced tomatoes

Sliced cheese (optional)

Maple syrup (for drizzling, optional)

Marinate the Chicken: In a bowl, soak chicken tenders in buttermilk for at least 1 hour (or overnight for best results).

    Prepare the Waffles: In a large mixing bowl, whisk together flour, baking powder, salt, and sugar. In another bowl, beat the eggs and mix with milk and vegetable oil. Combine both mixtures and stir until just blended; do not overmix.

      Cook the Waffles: Preheat your waffle maker and spray it with non-stick cooking spray. Pour enough batter into the waffle maker to fill it about halfway. Close and cook according to the manufacturer’s instructions until golden brown. Repeat the process until all batter is used (you should end up with about 12 mini waffles).

        Fry the Chicken: In a large skillet, heat oil over medium-high heat. Remove chicken from the buttermilk and let excess drip off. In a shallow dish, combine garlic powder, onion powder, smoked paprika, and black pepper. Dredge the chicken tenders in the seasoning mix and fry them for about 5-7 minutes on each side, or until golden brown and cooked through. Drain on paper towels.

          Assemble the Sliders: On a mini waffle, place a piece of fried chicken, followed by a drizzle of ranch dressing, a handful of shredded lettuce, and diced tomatoes. Top with a second mini waffle to create the slider. If desired, you can add a slice of cheese before the top waffle.
